摘要: 从表面活性剂的结构和性质出发,论述了表面活性剂作为食品乳化剂、增溶剂、起泡和消泡剂及增稠剂等的作用机理,概述了表面活性剂在食品工业中的应用,并对可食用表面活性剂的发展和应用进行了展望。

Abstract: Based upon the structure and applications of surfactant,the functional mechanism of surfactant which was used as food emulsifiers,solubilizers,foaming and defoaming agents as well as thickeners were reviewed.Meanwhile,the applications of surfactants in the food industry were summarized.The development and future applications of edible surfactants were prospected as well.
