Abstract:

The content of polypeptide and exopolysaccharide in the fermentation supernatant of six kinds of lactic acid bacteria was investigated and compared. It was found that the content of polypeptide in the supernatant of Lactobacillus plantarum N2 was up to 1.7 g/L, and the content of exopolysaccharide in the supernatant of Lactobacillus plantarum N4 was up to 5.0 g/L. The antioxidant capacity of six kinds of lactic acid bacteria was evaluated by ABTS+ free radical scavenging capacity, ROS free radical scavenging capacity and the influence on SOD enzyme activity and CAT enzyme activity. Then, the whitening ability of six kinds of Lactobacillus was evaluated by the inhibition rate of tyrosinase and the effect on the content of melanin in cells. The results show that FMS has certain antioxidant and whitening ability, in which the free radical scavenging activities of N2 and N4 were higher than those of Vc group. The inhibition rates of N2 and N4 to tyrosinase were 71% and 68%, respectively. N2 and N4 have good antioxidant and whitening ability.
