Study on the relationship between rheological properties and the thickness of O/W creams

Abstract:

The rheological properties of O/W creams with different thickness index were investigated. The flow curves were fitted in nonlinear co-rotation Jeffreys model, while linear viscoelastic curves were described by Maxwell constitutive equation. The results showed that with the increase of the thickness index, rheological properties such as apparent viscosity, shear stress at low shear rate ($\dot{\gamma}$<20 s -1) and viscoelastic modulus increased. Meanwhile, lg $\eta_{0}$(viscosity in nonlinear co-rotation Jeffreys model) , $\tau$ ($\dot{\gamma}$=10 s -1) and lg G*($\gamma$=1%) showed clear linear relationship with the thickness index. Quantitative studies of rheological properties and thickness index could be used to predict the thickness degree.
