Abstract: Based upon the structure and applications of surfactant,the functional mechanism of surfactant which was used as food emulsifiers,solubilizers,foaming and defoaming agents as well as thickeners were reviewed.Meanwhile,the applications of surfactants in the food industry were summarized.The development and future applications of edible surfactants were prospected as well.
